Bidfood Opava: Frozen bakery

The pastry and bakery production was established in Opava in spring 2010. The Nowaco puff pastry has received a wide recognition, later it has been rebranded to Dobroty babičky Kláry. Thanks to the highest quality raw materials and unique processing technology, the structure of the pastry we make it up of nearly 90 layers. The classical, manual kneading method is substituted by a sophisticated 50-meters-long production line.

In the case of the bakery, the fresh pastry is continuing into a cutting machine, shaping machine, oven and eventually to a freezer. The freezer processes around 8 000 pieces of bakery per hour by rapidly freezing it to –30°C - –40°C. The rapid freezing is the most economical way of food preservation.

All frozen bakery products are sold under the brand Bagetier. The factory supplies 4 000 tons of frozen bakery and pastry per year – that’s around 180 trucks.
